Matcha Soufflé

Ingredients:

  • 2 tbsp matcha powder
  • 2 tbsp flour
  • 4 tbsp sugar
  • 2/3 cup milk
  • 4 egg whites
  • 2 egg yolks
  • Butter and sugar for ramekins

Instructions:

  1. Preheat oven to 390°F (200°C). Butter and sugar ramekins.
  2. Mix matcha, flour, and milk over low heat until thick. Remove from heat, add egg yolks.
  3. Beat egg whites with sugar to stiff peaks. Fold into matcha mixture gently.
  4. Fill ramekins and smooth the tops. Bake for 15-18 minutes until risen and set.
