Matcha Macarons


  • 1 cup (120g) powdered sugar
  • ¾ cup (75g) almond flour
  • 2 tablespoons matcha powder
  • 2 large egg whites, room temperature
  • ¼ cup (50g) granulated sugar
  • Filling: Your choice of matcha buttercream or white chocolate ganache


  1. Sift powdered sugar, almond flour, and matcha powder together.
  2. Beat egg whites until foamy, gradually add granulated sugar, and beat until stiff peaks form.
  3. Fold dry ingredients into egg whites gently.
  4. Pipe 1-inch rounds onto a lined baking sheet. Tap to remove air bubbles and let sit for 30 minutes.
  5. Bake at 300°F (150°C) for 17-20 minutes. Cool on the sheet, then fill with chosen filling.
