Matcha Cheesecake

Ingredients:

  • 2 cups crushed graham crackers
  • 1/4 cup unsalted butter, melted
  • 2 tbsp sugar
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 4 eggs
  • 2 tbsp matcha powder
  • 1 tsp vanilla extract
  • 1/4 cup sour cream

Instructions:

  1. Preheat your oven to 325°F (163°C). Mix crushed graham crackers, melted butter, and 2 tbsp sugar. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes.
  2. In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each addition.
  3. Mix in matcha powder, vanilla extract, and sour cream until well combined.
  4. Pour the filling over the crust in the pan. Bake for 55 minutes or until the center is almost set.
  5. Let cool, then refrigerate for at least 4 hours. Serve chilled.
