Matcha Biscotti

Ingredients:

  • 2 ¼ cups (270g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • 2 tablespoons matcha powder
  • ¾ cup (150g) granulated sugar
  • ½ cup (115g) unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup (60g) almonds, chopped

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Whisk together flour, baking powder, and matcha powder.
  3. Beat sugar, melted butter, eggs, and vanilla until well combined. Gradually add dry ingredients, then stir in almonds.
  4. Form the dough into a log on the baking sheet, flatten slightly.
  5. Bake for 25 minutes, then cool for 15 minutes. Cut into slices and bake again for 10 minutes each side.
