Matcha Banana Bread


1 3/4 cups (220g) all-purpose flour

2-3 ripe bananas, mashed

1/2 cup (115g) unsalted butter, melted

3/4 cup (150g) sugar

2 large eggs, beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

2 tablespoons matcha powder

1/2 cup (120ml) sour cream or yogurt



Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

In a large bowl, mix the mashed bananas with the melted butter.

Mix in the sugar, eggs, and vanilla.

Sift together the flour, baking soda, salt, and matcha powder. Gradually add to the banana mixture. Stir to combine.

Fold in the sour cream or yogurt until just mixed.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.

Let the bread cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
